Hot Dogs, Coleslaw, and Potatoe Salad: YUMMY!

I was craving hot dogs last night. So, I indulged.  I put mine on the George Forman, but you can cook it the way your heart desires.

Ok, my "homemade" potatoe salad. I got this recipe from my "How to Cook Evertything" Cookbook. I don't even remember who gave me this book. But THANKS to whoever it was. ;)
1 1/2 lbs. waxy potatoes, such as red new potatoes ( I used yukon gold)
1/4 C. Dijon Mustard (used spicy brown)
1/4 C. Grainy Mustard (used yellow)
1/2 C. Olive Oil (used grapeseed oil)
1 Tbs. Vinegar (used apple cider vinegar)
3 Tbs. choppe fresh basil leaves (used about 1 Tbs. of dried Basil)
Salt and pepper to taste

Makes 4 Servings
1. Bring a medium pot of water to a boil; salt it. Peel the potatoes if you like (or wash or scrub them well), then cut them into bite-sized pieces; cook them in the water until tender but still firm and not at all mushy. 15 mins. or so. Drain.
2. Mix together the mustards, oil, vinegar, and basil, and toss with the potatoes. Season with salt and pepper. Serve warm or at room temperature. (This can be refrigerated for up to a day; bring back to room temperature before serving.)

Notes: I did not mix in the whole thing. It was a little too mustardy as it was.  So maybe start out with a 1/4 of it then taste. You can save the rest of the mixture for the next time you want to make Potatoe Salad. Also, I like my potatoe salad cold. So that's how I served it.

Ok, I eyed everything for this so I will do my best at giving you an accurate measurement of each ingredient.

1/2 head cabbage
1 carrot
1/2 C. Mayo
1 Tbs. Vinegar
2 Tbs. Sugar
Salt and Pepper to Taste

Serves roughly 4 people (depending on how much you like slaw)
Dice Cabbage.  Use a potatoe peeler and peel carrot all the way to nothing. Dice carrot peelings.  Add to cabbage.  Add mayo, vinegar, and sugar.. Mix. Salt and Pepper to taste.  You need to eye the Sugar and Mayo.  Depending on how dry or wet you like your slaw will depend on how much mayo you put in and depending on how sweet you like it will depend on the amount of sugar.

Notes: Try the slaw on your hot dog or hamburger, it's SOOOO good!

Rite Aid: Part 2 for this week

Here's what I got at Rite Aid yesterday:

I received a $10.00 +up to be used on my next in store purchase.

Lysol Wipes: 2/$5.00. I previously posted a link to print off a $1.50 coupon. I used that coupon and a $1.00 off coupon I got off of Rite Aid's website. If you did not get these coupons, you could use the $1.00 off of two coupon in the Sunday newspaper a couple weeks ago.


Mr. Clean- $1.99. I used the $1.00 off coupon in the Sunday newspaper about 3 weeks ago. 


Air Wick- B1G1 Sale at $1.69 each. I had B1G1 coupons. Which made the total $.30 for two.  At Rite Aid, when you pair a B1G1 coupon with a B1G1 store deal, you get the product free.  The coupon's small print said "up to $1.29" So I had to pay a few cents. No big deal!


Finish Dish detergent- B1G1 at $4.99. I used the $1.75 coupon. I posted that link in my previous blog.  I printed off two of them, and got a total of $3.00 off this deal. 


No Nonsense Pantyhose- B1G1 at $2.59 and I had a $1.00 off coupon from Rite Aid's website.

When you spend $30.00 on certain products you  get a $10.00 +up back. The items that qualify for the +up are shown in their ad.

Here's my Rite Aid deals SO FAR. They were out of quite a few things I wanted to get. I will be going to a different one and will keep you posted. Please read everything I have here... it will be a help!

Ok... a little explanation

Total: $7.92 (I was able to use previous +up "dollars" also). Got back $10 RR. So I made money here. You see?  I bought the Nivia Body Wash in two seperate orders so I would get two different $5.00 +ups.

+UPs.... what are they?  They are printed at the end of your receipt and can be used on your next shopping trip. Or do like I do and make multiple orders so I don't spend as much out of pocket.

Alright, here they are. Hang tight as I do my best to explain what all I got. Did not take any actual pictures this time. Sorry.

Goody updo Barrette: $3.00 with a $3.00 RR to use on your next in store purchase.
Eggs: Sale 1.29. Buy two and get a coupon for two free one night Red Box rentals.



 Osteo Bi-flex is B1G1 one right now. And I used two $6.00 off coupons. 
2 Dove milk Chocolate candy bars: .39 cents each with in ad coupon and I used a .75 cent off two coupon: Total: $.05/2

Dr. Pepper mini 7.5 oz. 8 pck. - Sale 3.99. Use a $2.00 off in ad coupon. Total: $1.99
Orville Redenbacher's 3pck popcorn-2/$5.00. I used the $1.00 in ad coupon. Which made it $2.00 off. Total: 2/$3.00

I actually also paired the pop and popcorn with two other coupons I had that was a $1.00 off of two popcorns and $1.50 off of pop and popcorn. But since this was a rare coupon a long time ago you may not have them. If you  do have them then you can use those as well. You can pair manufacturer coupons with Walgreen's store coupons!!!!

Starbucks Frappuccino 4 pack- Sale $4.99 with in ad coupon. I bought two and used two $1.00 off online coupons that got off of HIP2SAVE.COM



I have not bought this yet because my Walgreen's stores are all out right now. But they have their Airwick Freshamtic kits on sale for 50% off right now. Pair it with your $4.00 off coupons in this last week's paper and you can get it for FREE when you buy the cheapest one.

I was able to use previous Register Rewards. MY total spending for Walgreen's was: $27.07
Keep in mind that one Osteo Bi Flex alone cost $30.00.

Chicken Fajita Pizza


Use Pizza dough recipe located on the BBQ chicken pizza blog.

Ingredients for Topping:
1 homemade pizza crust -you can use store bought, but it won't be as good ;)
1/2 tub of Sante' fe' Philadalphia cooking Creme
1/4 C. lime juice    
2 TBS Oil
2 garlic cloves
1 lb. cubed cooked chicken
16 oz. salsa
1/4 c. green pepper
1 gr. onion
1 1/2 c. cheese
sourcream (optional)

Instructions:     

Make your dough 3 hours before you plan on eating. Be sure to follow the instructions on my previous blog. Only add a taco seasoning packet and 1TBS of diced green onion to dough mixture.

 Cube chicken and put in a bowl

 Peel and dice garlic and add to diced chicken

Dice peppers and remaining onions

   Combine lime, oil, garlic, and chicken. Stir and let marinate 15 mins.

Saute' Chicken until juices have cooked out. I like to cook my chicken until it has browned. I think it taste better. But that is up to you. You could drain the juices, I don't, because I think the flavors cook into the chicken better.

Combine salsa and cooking creme


Lightly flour pizza pan/stone


Roll out dough


Spread salsa/creme mixture on dough.


Add Chicken

Add onions, peppers, and cheese

Bake at 450 degrees for 8-10 minutes.
Serve with sour cream.
