Chicken and Sausage Gumbo

I made this the other night and loved it!

(I cheated on the picture, I didn't take one...sorry)

Ingredients

  • 1/4 cup all-purpose flour (about 1 ounce)
  • 2 tablespoons olive oil
  • 2 1/2 cups finely chopped yellow onion (1 large)
  • 1 1/2 cups finely chopped green bell pepper (1 large)
  • 1 cup finely chopped celery
  • 3 garlic cloves, minced
  • 1 1/2 pounds skinless, boneless chicken breast, cut into 1 1/2-inch pieces
  • 8 ounces light smoked sausage, cut into 1-inch pieces (such as Healthy Choice brand)
  • 2 (14 1/2-ounce) cans no-salt-added organic diced tomatoes
  • 2 (14-ounce) cans fat-free, less-sodium chicken broth
  • 1/4 teaspoon Worcestershire sauce
  • 2 bay leaves
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon hot sauce
  • 3 cups hot cooked rice

Preparation

  • Place flour in a large Dutch oven over medium heat; cook 20 minutes or until light brown, stirring constantly with a whisk. (If flour browns too fast, remove pan from heat; stir constantly until it cools down.) Remove flour from pan, and set aside.
  • Add oil to pan. Stir in onion, bell pepper, and celery; cook 10 minutes or until onion is tender, stirring frequently. Stir in garlic; cook 30 seconds. Remove onion mixture from pan; set aside.
  • Increase heat to medium-high; add chicken and sausage to pan. Cook 4 minutes or until chicken is done; return onion mixture to pan. Remove pan from heat. Sprinkle reserved flour over chicken mixture; stir well. Return pan to medium heat. Drain 1 can tomatoes; stir in 1 can drained tomatoes and 1 can undrained tomatoes. Cook 2 minutes, stirring constantly. Add broth, Worcestershire, and bay leaves; bring to a boil, stirring constantly. Cover, reduce heat, and simmer 30 minutes, stirring occasionally. Discard bay leaves. Stir in salt, black pepper, and hot sauce. Serve over rice.


TWEAKS: Pick your favorite Buffalo sauce and hot sauce and cayenne pepper to desired amount of spiciness before letting it simmer for 30 mins.  I put probably 10 drops of Louisianna Hot sauce,1/4 C. of my favorite Buffalo sauce, and 1/4 tsp. of cayenne pepper.

Homemade Chocolate Brownies

"How to Cook Everything" by Mark Bittman 
Ingredients:
8 TBS. unsalted butter (1 stick)
2 C. cake or all-purpose flour, plus some for dusting the pans
3 oz. unsweetened chocolate, roughly chopped
1 C. Sugar
2 eggs
1 tsp. vanilla extract
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 1/4 C. milk

Directions:
1. Preheat the oven to 350 F. Spray Cupcake pans with nonstick cooking spray. Or you coul use cupcake papers.

2. Melt the chocolate in a small saucepan or double boiler. If over a asaucepan, cook over very low heat, stirring occasionally; if in a double boiler, cook over hot (not boiling) water, stirring occasionally. When the chocolate is just about melted, remove from the heat and continue to stir until the mixture is smooth.

3. Use an electric mixer to cream the butter until smooth, then gradually add the sugar. Beat until light and fluffy, 3 or 4 mins. Beat in the egg yolks, one at a time, then the vanilla, and finally the chocolate.  Mix togethr the flour, baking powder, baking soda, and salt in a bowl and add them to the choolate mixture by hand, a little at a time, alternating with the milk. Stir until smooth, no longer.

4. Beat the egg whites until they hold soft peaks.  use your hand or rubber spatula to fold them gently but thoroughly into the batter. Spoon cupcake papers in each of the compartments; fill almost to the brim.  Bake at 350 for 20-25 mins. Cook on a rack and then put desired icing on cupcakes.

Tweaks: I used cocoa powder instead of unsweetened chocolate. I followed the directions on the box of cocoa powder on how to make unsweetened chocolate using cocoa powder and crisco. I did not melt the chocolate, just added the cocoa powder in with the dry ingredients, and the crisco in with the butter.  Turned out yummy. I cheated on the icing because I was just using what I had on hand. I used Duncan Hines squeezable icing.  Sorry for dissappointing you there :)  Enjoy!

Goldsmiths Egg Plant Pizza: Low Carb Recipe


This is really great if you like eggplant. I couldn't get over the consistency of the eggplant, but hey, it was worth a try. Trying to eat healthier ;)

Ingredients

Eggplant, fresh, 1 eggplant, unpeeled (approx 1-1/4 lb
Winn Dixie Classic Style Fat Free Pasta Sauce. (1/2 Cup), 1 cup
Mozzarella Cheese, part skim milk, 8 oz
Hormel Turkey Pepperoni (17 is one serving), 1.2 serving
Mushrooms, fresh, 16 slice

Cut the Eggplant along its axis (the length) into four slices. Lay on cooking sheet. Now build it like a pizza.... pour sauce onto each piece and cover completely. Add 1/4 cup cheese to each, add 6 pepperonis, add 4 mushrooms add to oven and cook.

Don't Procrastinate!


*Putting off cutting out all those coupons will get you behind and overwhelmed
*Get help from kids, husbands, Aunts, uncles, and who cares who else as long as they help you with all that cutting and organizing! LOL :)

Ok, here's how I clip my coupons:

 I actually bought six, but I didn't get the other three until today, so here's three.

 Took out all of my Smartsource and Red Plum booklets

Took all of my ads that I wanted from one of the newspapers and set them aside to look at later.

I seperated all three of the Smartsource and Redplum in three different piles.

 Then I seperated each page and stacked them on top of each other


 Then the cutting began. Cut them while the are stacked on top of each other so you can hit three birds with one stone (or cut) LOL

*I seperate them into piles, as I'm cutting them, of how I have them organized in my coupon book. This does take up a lot of space. So you figure out what works for you.


Then the organizing begins

*Just to let you know, I do have a friend that uses envelopes and an empty baby wipe container to organize her coupons, so if this sounds more inviting, then go for it! She likes that system better.  For me, personally, I like to be able to see more than one coupon at a time. I do recommend finding a bag to keep your coupon book in. It's much easier to carry.
*Use a paperclip to clip coupons together when you are at the store. This helps keeps your coupons you are going to use in the store seperated.

Tips for Couponing: Tip #1

GET ORGANIZED!!!

Buy yourself the following:




A 2" three ring binder


Baseball card protectors. I bought mine on Ebay for really inexpensive. But recently I just saw a pack of 10 at the $ Tree. So that would be awesome if you could buy them there. I recommend buying  at least two of them to start off with.

Tabs to organize your coupons by whatever category you see fit. I organize mine by the isle the product is found in the store: Baking, Bread, Beverage, Frozen, Health and Beauty, etc.

A three ring pencil holder to stick in your binder. You can put whatever you'd like in here. I put a pair of scissors, extra tabs, and sometimes receipts in case I may have to return an item. I know right where the receipt is.

And last but probably not least... Print a copy of coupon policies from the stores that you shop at most frequently. Just click on the links below to print. Suggestions:

I felt so cool that I got to talk to the head honcho, just so you guys know.  But if this is something you have to do at your commissary then do so. It's so worth it! I just called him and left him a message. He called me back, then I went in and talked to him about it.

Pan-Seared Pork Chops


Pan-Seared Pork Chops with Southern Seasoning
Sweet Corn on the Cob

I got the porkchop and seasoning recipe from my Cast Iron Cookbook. By: Joanna Pruess
*Thank you Grandma Patty for sending me this cookbook for my B-Day!

Ingredients:
16 oz. Mushroom Caps
Southern Seasoning Mix (recipe follows)
4 (1-inch thick) Bone-in loin pork chops, blotted dry
1/2 Tbs. oil
Salt to taste

Souther Seasoning Mix: (Very yummy if I must say so myself)
1 Tbs. Chili powder
1/2 Tbs. each ground coriander, cumin, garlic powder, salt, and black pepper
2 tsp. cayenne (doesn't make pork chops spicy. Just enough flavor)
1/4 tsp. ground cinnamon

1. Combine the Seasoning ingredients in a small bowl or jar and mix well
2. Dice mushrooms and put in a skillet and saute' with aprox 1/2 Tbs. butter until tender. Keep warm in an oven at 250 degrees until ready to serve.
3. heat a very large cast iron skillet large enough to hold the chops in a single layer without crowding over medium high heat until hot but not smoking, 3/12 to 4 mins.(Or you can do what I did and used my largest one and just cooked two at a time because my pan was not big enough).  Meanwhile, rub about 1 tsp. of the seasoning mix into each side of the pork chops.

Once the skillet is hot, brush it with oil, and lay the chops in the pan with the thickest parts toward the center. Season with salt and cook for 3 mins.; turn, season the other side with salt, and cook for 2 1/2-3 mins. or until the meat measures 125-130 degrees F on an instant read thermometer inserted into the thickest part of one chop close to the bone. Put chops in oven to keep warm while cook the other two chops.  Serve. Prepare to indulge in some very yummy food!

Terrific Turkey Enchiladas



 





Taste of Home: April/May 2011 Recipe By: Jenn Tidwell

Ingredients:

1-1/4 cups frozen corn, thawed
1 can (4 ounces) chopped green chilies
1 cup fresh cilantro leaves
1/3 cup heavy whipping cream
1/4 teaspoon salt
1/4 teaspoon pepper


ENCHILADAS:
3/4 pound ground turkey
1/3 cup chopped onion
1 garlic clove, minced
1 tablespoon olive oil
3/4 cup salsa
1 tablespoon cornmeal
2 teaspoons chili powder
1-1/2 teaspoons ground cumin
1 teaspoon dried oregano
1/8 teaspoon salt
1/8 teaspoon pepper
6 flour tortillas (8 inches), warmed   ***** Note: I made my own the day before and doubled their size so they would be Enchilada size. Refer back to recipe on one of my previously posted blogs
1-1/4 cups shredded Mexican cheese blend, divided
1/4 cup sliced ripe olives

Directions:
1. Place the first six ingredients in a food processor; cover and pulse until blended.
2. In a large skillet, cook the turkey, onion and garlic in oil over medium heat until meat is no longer pink.
3. Remove from the heat; stir in the salsa, cornmeal and seasonings.
4. Spoon 1/3 cup turkey mixture down the center of each tortilla; top with 2 tablespoons cheese. Roll up and place seam side down in a greased 11-in. x 7-in. baking dish. Spoon corn mixture over the top; sprinkle with olives and remaining cheese.
5. Cover and bake at 350° for 30 minutes. Uncover; bake 5-10 minutes longer or until heated through. Yield: 3 servings.

Note: Very Yummy! The Cilantro sauce was excellent. I would substitute chicken next time

That's a pretty good deal for two razor cartirdges even if you don't need the handle. That's why I bought these.

The Reason I bought so many was because Razor cartridges are expensive.  I was able to get 10 Cartridges plus the handles and  floss picks.  I'd say this was a GREAT deal!
